a simple & yummy veggie recipe

Oh yum.
Think comfort with a hint of spice.  I'm madly in love with this new, simple, healthy dish.
And I'm all over one dish wonders!

Kale and Black Beans Over Rice

You'll need:
2 tbs. olive oil
1 onion, chopped
1 tbs. minced garlic
1 bunch of kale, chopped
1 cup fat-free chicken broth (or vegetable broth)
2 - 15 oz. cans black beans, drained and rinsed
2 tsp. smoked paprika
1 tsp. dried thyme
1 tsp. cumin
cooked rice

Heat oil in a large saucepan.  Add onion and cook 4 to 5 minutes or until softened.
Stir in minced garlic and cook 30 seconds or until mixture is fragrant.

Add chicken or vegetable broth and chopped kale.
Bring to a boil.  Reduce heat, cover and simmer 5 or 6 minutes.  Stir occasionally.

Add black beans, smoked paprika, thyme and cumin.  Salt & pepper to taste.
Simmer 5 minutes.

Serve over cooked rice.  Enjoy

Optional Additions:
cherry tomatoes
fresh lemon juice
hot sauce
sliced avocados
corn tortillas

  1. This looks yummy, I'm going to try it!! I'm vegan so I'll be using Veggie broth for sure and I'm leaving out the oil, can't tell the difference in the taste and it takes out a big chunk of calories from fat.
