blackberry cobbler

It's been two days since my brain schlepped in the door from our vacation and one week since my body returned. If you're interested in seeing a brief, but funny recap, hop over to my other blog home. The post is appropriately called, "Vacationing with Teens". It's worth the trip.

But before you go...

Remember I said something earlier in the week about finding a blackberry patch and picking two gallons of HUGE wild blackberries? No? That's okay. The important part of the story is that we (meaning my friend, Lynn) made the easiest and most delicious blackberry cobbler with the fruit of our labor - and we did labor. Then we (Lynn and I) ate it while the guys played poker. :)

That would be my tee shirt, caught on a thorn. You have no idea. Or do you?
Seriously, do you?

Have you ever picked blackberries in mid 90's weather? Well, first, it's hot - duh. But more importantly you walk away with a brand. That is, unless you wear long sleeves and long pants and gloves and socks. I'm talking about thorns - large, prickly thorns. Yes, we wore our scratches proudly for the rest of the week because the reward (blackberry cobbler) was SO worth the tiny, little, prickly thorns.

Sorry for the bad photo quality. Night. Bad lighting. Couple glasses of wine, you know...

Easy Blackberry Cobbler

(sorry, she eyeballs things like me)

1 stick margarine
1 cup each: milk, flour, sugar
1 tsp. baking powder

Melt the margarine in a baking dish at 350 degrees
Mix the milk, flour, sugar, and baking powder
Pour this mixture over the melted butter. Do NOT stir.

Add about 1/4 cup sugar (to taste) to 3-4 cups of fruit
Pour this over the mixture. Again, do NOT stir.

Bake for about 1 hour until brown and bubbly and (I promise) yummy

Enjoy and don't forget the vanilla ice cream!!

  11. Mmmmm....love fresh berries! I planned to make a peach-blueberry crisp yesterday (Delaware peaches are in season and awesome!) for our house guests, but our a/c went out, and I didn't want to turn on the oven and add any extra heat to the house. Maybe tomorrow after it's repaired.

Meanwhile, I'll drool over your pics...(glad you explained the t-shirt one).
